Roasted Potatoes (Rosemary Option)

Who doesn’t LOVE roasted potatoes?!  And, fresh off the grill – YES, Please!  Check out the option for turning these into Rosemary Roasted Potatoes, below.

Ingredients

  • 1 Lb fingerling or baby potatoes, halved
  • Avocado oil
  • Salt, to taste

Instructions

  1. Heat oven to 425-degrees and line two baking pans with parchment paper
  2. Toss potatoes with enough avocado oil to coat and salt to taste.
  3. Place potatoes cut-side down and bake approximately 25 minutes,switching pans half-way through, until the are golden brown on the bottom

Notes

If you have an abundance of rosemary (or just love the flavor), mince up 1-1.5 TB of fresh rosemary and toss with potatoes and oil before grilling (or oven roasting).  Yum-tastic!
