Almond Butter Chocolate Chip Bars (Vegan, GF)

Need an easy, crowd-pleasing treat?  These Almond Butter Oatmeal Chocolate Chip bars are wholesome, yet delicious!  Make sure you have plenty ‘cuz they go fast!

  1. Preheat oven to 350-degrees.  Line a 9-inch pan with parchment (could use 8-inch if you like thicker bars) and set aside.
  2. In a mixer (or large bowl using a hand-held mixer), cream coconut sugar, almond butter and vanilla until well blended.
  3. In another bowl, combine oat flour, oats, baking powder and salt.
  4. While mixer is off, add dry ingredients to the mixing bowl, then add “milk” to coat.  Mix slowly until just combined. Add chocolate chips and stir until evenly distributed.
  5. Press mixture into prepared pan and top with extra chocolate chips.
  6. Bake 20 minutes or so (more if using smaller pan), until a toothpick inserted into the center comes out mostly clean.
