Cashew Butter

Adds that classic cookie dough creaminess without overpowering the flavor. Almond butter works too, but cashew butter is my favorite for this recipe.

Lakanto Monkfruit Sweetener

I use the classic white version here. It gives just the right sweetness without raising blood sugar. You can swap in another 1:1 sugar-free sweetener if preferred.

Chocolate Chips

I love mini vegan chips sweetened with coconut sugar or monkfruit. They distribute evenly through each bite and keep it refined sugar–free.

Storage Tips

Fridge:

Store in an airtight container in the fridge for up to 2 weeks.

Freezer:

Freeze on a tray, then transfer to a container or freezer bag. Pull one out whenever the snack craving strikes—they thaw in just a few minutes.

  1. Mix coconut butter/manna, cashew butter and sweetener in a bowl. If manna is hard, microwave a little bit (30-second increments) until it is the consistency of nut butter.
  2. Add chocolate chips and refrigerate for 30 minutes to allow it to harden enough to form balls. (If it’s cold in your house, this step might not be necessary).
  3. Form into 1 to 1 1/2-inch balls and keep refrigerated. Enjoy whenever you need a little something to keep you going!
